Main Duties


Menu Planning:

o   To provide breakfast, cold buffet lunch, sweet and savoury afternoon tea, canapés & 5 course dinner for guests during their stay

o   To plan a series of menus that meets the high standards set by the company. These are to include dishes for those with special dietary requirements and a children’s menu

o   Menu plans to be checked to ensure product availability and to be costed against given budget requirements

o   Chef to contact guests 10 days before arrival to check any specific dietary requirements, and to agree menus with Lead Name


Shopping and Stock-keeping:

o   To be responsible for ordering /purchasing all necessary produce/product for the weekly menu plan in line with budget requirements

o   To be responsible for keeping all receipts/delivery notes/invoices

o   To ensure that all storage areas are kept clean and that all produce/product storage is in accordance with the guidelines in the Health & Safety Manual

o   To ensure that there is an efficient process in place to manage all deliveries and stock rotation

o   To deal respectfully with all suppliers and follow the agreed ordering process and timings


Cooking and Cleaning:

o   To plan, prepare, cook and serve the following:

o   Breakfast – cold & cooked options

o   Buffet lunch – cold & cooked options

o   Afternoon tea with homemade cakes and/or biscuits and a savoury option

o   Canapés ( selection of 3 per night)

o   3 course dinner plus cheese course and petit fours

o   Staff meal each evening

o   To ensure that correct wines to match menu are prepared ready for serving with dinner

o   To clean the kitchen on a daily/weekly and seasonal basis

o   To ensure a full and deep clean of the kitchen, dining and storage areas at the end of the season

o   To clean the dining area on a daily/weekly and seasonal basis

o   To ensure that the guests’ drink fridge is kept clean and well stocked

o   Ensure guests’ fruit bowl & all guests snacks are kept well-stocked


Customer Service:

o   To provide high standard of customer service to ensure that all guests have a great holiday

o   To assist with the ‘Welcome Speech’ to incoming guests to ensure that they have all key information regarding mealtimes etc during their stay

o   To provide resort and local information to guests to enhance their stay

o   To assist with the running of an in-resort minibus service & when required with airport transfers

o   To report any problems with chalet/guest/suppliers etc to Resort Manager



o   To prepare weekly accounts

o   To complete weekly report detailing menus cooked and any comments on week’s performance

o   To complete a pre and post season inventory of the kitchen and storage area

o   To complete fridge/freezer temperature chart on daily basis

o   To follow all Health & Safety procedures as laid down in the Avery Crest manual

o   To assist with all resort operations as required



o   Chef qualification and experience working in a 2AA rosette (or above) restaurant

o   Experience of working front of house / directly with customers

o   Excellent timekeeping

o   Hardworking and flexible approach

o   Experience of working in a team

o   Clean driving licence

o   French speaker an advantage
