HEAD CHEF

OVERVIEWThis is a very demanding but extremely rewarding role with full responsibility for the catering service in the lodge. The emphasis in this role is the ability to draw on your own impressive experience and creativity to design and deliver a luxury lodge catering service of the highest possible standard. MAIN RESPONSIBILITIES

·       Menu design and planning

·       Placing of all food orders

·       Preparation, management and service of breakfast, afternoon tea, canapés, five course evening meal, pre-dinner nibbles, after dinner petit fours

·       Catering for all guests special dietary requirements

·       Catering for all requests for special occasions

·       Catering for children and nannies (including early lunches and dinners when required) and being proactive in the approach to likes/dislikes

·       Managing food hygiene and general health and safety in the kitchen and dining areas

·       Keeping the kitchen clean, tidy and presentable at all times

·       Operating within the lodge food budgets by working with the Lodge Manager

·       Maintenance of all kitchen facilities and equipment 

·       Planning, preparation and timely service of staff lunch and dinner daily with health and hearty options. As this is a part of all staff wages this aspect cannot be overlooked

 

CANDIDATE PROFILE

We are looking for the following key personal qualities and attributes:

 

  • Positive and flexible attitude
  • Highly professional
  • Team player
  • Self-motivated

 


SKILLS AND EXPERIENCE REQUIRED

This role would suit an individual with the following skill set:

 

  • Recognised catering qualification or extensive experience
  • Varied repertoire and wine knowledge (an advantage)
  • Previous five star hotel experience (preferred)
  • Knowledge of nutrition, diets and allergies, food safety and storage
  • Excellent communication skills and positive attitude
  • Organised with good time management and adaptability
  • Fluent English with conversational German (preferred)
  • Full, clean driving licence (preferred)
  • Experience in driving in icy mountainous conditions (preferred)
  • Accounting and computer skills (preferred)
