Lodge Chef position

Live in Chef position on the west coast of Scotland

Experienced private chef potion available. 

Approximate dates July -February posable longer term

The job is working in a gastro hunting lodge its a great opportunity to learn a great deal about wild food and is set in one of the most beautiful parts of the British Isles with amazing local sea food and wild game good foraging opportunities for wild mushrooms and berries samfer grass and other sea weeds.

Your job will be to take game produced on the estate along with other amazing local produce and showcase these ingredients to our guests in exciting ways from yummy venison sausages for breakfast to woodcock and grouse on the evening dinner table. 

The group head chef William has a well recognised career in game cookery and is happy help with learning about carouse preparation and if you are uncomfortable about cooking any game meets he is also on hand to help with menu creation but you are intended to be mostly self serficent in generating menus budgeting and cookery 

Food spec must be of a high standard we are not looking for “pub grub” we want a chef with some flair and are happy to offer support ware needed.

Every day Monday to Saturday (Sunday meals will be prepared and served by the house keeper but must have been put ready on Saturday) Sunday is typically change over day and so your day off. Cooked Breakfast, light packed lunch or bread and soup for the hill, Baked afternoon tea, 3 course evening meal weeks when we do not have guests you will be expected to do larder work preparing and freezing game for later in the season and you are also welcome to partake in the sporting activities on the estate as well.

Our package includes house wine and beer but you should also be able to recommend wines from the private cellar should guests wish to spend a little more on some nice wines. 

Groups sizes will be typically 8 to 12 covers with an absolute max of 14 and minimum of 6 you will be expected to be able to explain the dishes to the guests and you will also be responsible for service washing up of kitchen equipment but dishes and day to day cleaning of the lodge is handled buy the house keeper who will also be there if you have any problems she is amazing. 

Salary is negotiable and tips for house staff are to be split equally. (Gillie and game keepers tips are divided within that team)
