Black Diamond is a progressive chalet concept by Guerlain Chicherit, four times word free ski champion. Six unique private residences catered from a central kitchen by our kitchen team, lead by you. Why not take on a completely fresh challenge this season?
From our newly equipped professional kitchen you will manage a small team of aspiring chefs in the delivery of our unique ‘rolling’ catering package, including breakfasts, snacks and dinner. As an ever changing new product you will be involved in the evolution and delivery of something truly unique and exciting. Working alongside the management team you’ll provide support for additional pop up events, as well as the wider chalet team.
The role is hard work but highly rewarding. Whilst we have extremely high expectations of our team, we also strive to create a positive environment for our staff. We structure our roles into realistic shifts so you can be sure you will enjoy a good balance between working and exploring everything the mountains have to offer. This position also offers the potential for further opportunities beyond the winter season.
Leading the Black Diamond kitchen team, working alongside the Operations Manager to deliver our exciting signature menus for breakfasts and 5 evening dinner services
Organising the availability and delivery of the daily snack menu
Ordering, receiving and delivery of all produce, stock rotation
Working with and managing allocated budgets, controlling costs and expenditure
Leading and mentoring a junior cheffing team and supporting the wider chalet team
Overseeing high levels of food hygiene and general kitchen cleanliness during all preparation and service tasks, completing HACCP records as required
Skills & Experience
Professional cheffing experience to a minimum of junior sous chef level
A real passion for modern dining experiences and the luxury ski industry
Prior responsibility for kitchen management and ordering
Flexibility – able to cope well with varied and changing tasks and environments
Excellent verbal communication - proficient in English
Organised and well-presented with an excellent eye for detail
EU Passport and/or the right to live and work in France
Ideal candidates would also have relevant experience in a seasonal environment
Experience of working in private homes, villas and/or yachts would be advantageous
French Contract, 5 day working week
