As Sous Chef, you’ll support the Head Chef with all the important behind the scenes operations including health & safety, budgeting, ordering & stock control. And just as importantly, they'll work closely with you to train and develop your skills. You’ll be a grafter, a team player and a holiday maker. It’s all about the Premiere Neige experience - for our guests and for you. 

We are looking for passionate Sous Chefs with creative flair for our Catered Chalets to come and join our team out in the Alps. Our chalets are luxurious properties, and with guests returning each year, Premiere Neige Chefs are a key part of our catering service. You'll be responsible for assisting in creating breakfast, cakes for afternoon tea, canapés and a four- to five-course evening meal. You will also assist in providing a two-course high tea for the younger guests in your chalet. And, of course, between morning service and coming back for the evening you'll be able to enjoy some well-earned time on the mountain with your lift pass and ski/board hire!

Along with catering for Première Neige guests, you will also assist with  administrative tasks which will include weekly Chalet Accounts, food ordering and Health and Safety paperwork. You will work closely with a Chef and the Chalet Host who will look after the front of house of the chalet operation. As you will be a key player in the guests' holiday, you must be personable and presentable. We're looking for professional, team-orientated people who are reliable and have a 'can do' attitude. Ideally you'll hold a recognised catering qualification such as NVQ or City & Guild Chef Qualification or have built up extensive work experience in kitchens.

Responsibilities and Duties Include (but are not restricted to):

  • Meeting and greeting guests on arrival and helping them with any queries, general questions and activity or restaurant bookings
  • Helping to produce a weekly menu to include breakfast, afternoon tea and a 4 course evening meal 6 days a week. Special dietary requirements can be requested by guests, so a degree of flexibility is needed to accommodate these requirements. 
  • Plating, presenting and serving food to a restaurant standard.
  • Carrying out a weekly stock take and food order within a given budget
  • Maintaining all health, safety and hygiene regulations
  • Cleaning the kitchen, and where necessary, other areas, to a high standard
  • Working with a chalet host to ensure the highest standards of cleanliness and service
  • Being responsible for the immediate reporting and resolution of all relevant maintenance problems
  • Liaising with the resort management to ensure standards of guest satisfaction are met and exceeded
  • Working closely with your chef and hosts on changeover days to ensure that the chalet is perfectly presented.
  • Working with the Concierge and Catering departments to ensure that all arriving guests have been asked for any dietary requirements, and to adjust the menu and food orders accordingly.

The Ideal Candidate:

  • Is flexible, reliable and can work autonomously
  • Can assist in planning menus, taking into consideration children and guests with specific dietary requirements
  • Can assist in managing a catering budget and order accordingly
  • Has a good understanding of H & S and a food hygiene qualification
  • Has an open, friendly and outgoing personality
  • Is available to work from approximately the beginning of December 2018 until the end of April 2019, however we will consider applicants who can only work part of the season
