No previous experience is necessary, we teach right from the basics to more complex methods (from how to use a knife safely to making a Bechamel sauce). We take bookings from individuals and couples or if you want to get a few friends together we can take small group also. We take all ages from 16 upwards. An information packed hands-on one week course combining practical skills with fun. We teach you...

 
  • Recipes that are quick & easy to cook for large numbers, mouth-wateringly tasty, varied & nutritious
  • Using ingredients which will be available to you in winter in the Alps
  • Using methods of cooking specific to altitude (do you know how long it takes to boil an egg at altitude?)
  • Dealing with special dietary requirements including 6 day vegetarian menu & wheat-free/dairy-free/vegan etc. recipes
  • How to work efficiently on your own & as a team
  • Top tips on menu planning (you may have to present a weekly plan to your manager)
  • Managing your budget (you will be cooking on a very tight budget)
  • Portion control (just how much do hungry skiers eat?)
  • Current FOOD HYGIENE & SAFETY regulations (allowing easy completion of accredited certificate online)
  • Tricks of the trade & how to maximise your ski time
  • Essential health & safety practises for maintaining a clean kitchen & keeping food safe

Unlike other cookery courses with individual catering school style workstations, every day you prepare and cook breakfast, lunch (kids meals), afternoon tea and a three course evening meal including a vegetarian option in a REAL CHALET KITCHEN and sit down to dine with your guests, just like you will in your chalet. During the day there are theory sessions covering all the important things you need to know. This is truly THE MOST AUTHENTIC CHALET COOKERY COURSE available.

  • based in a fantastic location in La Rosiere in the heart of the French Alps
  • stay in our luxury chalet with outdoor hot-tub
  • taught by experienced and qualified tutors with chalet hosting experience as well careers in catering and hospitality
  • enjoy time off to sample local activities including white-water rafting and hiking (both weather permitting, white water rafting is no longer available after end September) 

NB: Due to the nature of the course we are unable to take bookings from people with any type of food allergy or intolerance other than vegetarians and any vegetarians must understand they will be expected to cook meat.

I want a job this winter...what date should I book?

You need to start applying for jobs in May/June and tell companies you are booked onto the course. This will give you an advantage over other job applicants who have not booked on a course. It is almost irrelevant which date you book the course, so long as you book it and ensure you tell companies you are applying for jobs.
